There's no right answer for that quesiton without knowing your income level, how much time you'll have ot work on possible problems, and whether or not this will be a dedicated track car. I'd say go for the MR2, because mid-engine cars rock. The 240 is definitely cheap to maintain, and the 3000gt is pure sex on wheels, so those are a good toss up as well. I wouldn't get the GSX unless you found one at a good price.

If you can get your hands on a VR-4, I say go for it, just out of rarity. It's a badarse car and there aren't too many of those around, so you could always resell it for a good price.
Otherwise, the MR2 is a sweet car too.
240sx's are so overdone and every drifter-wanna-be out there has one in their backyard. Avoid that at all costs.
Eclipse, meh....not bad.

.........so true, if you want something rare and absolutely amazing...get the VR4 and u will not be dissapointed, plz dont get the s13 its soooo over rated/done, eclipse gsx is total street so if u want somethign not 2 expensive but that can handle your weekend highway races get it, Mr2's are cofusing, the mid engine is sweet but id keep away from them because simply, Mid engines are hard and confusine

Whatcha gonna do with it? Thats the million dollar question. Compromises can be made, but first decide why you want one and you will be much better of.
*BTW, GSX and VR4's have complicated drivelines, especially with the VR4's rear wheel steering thing-a-ma-jig, so if something breaks during a hard launch, you will be coughing up quite a bit of cash for parts and labor.
Personally I'd say a turbo mr2

First off with the vr4 go with a 93-96... 93 still has the first gen looks if you like that.
Gsx's are nice cars. And also dont require you to be a mechanic NEAR as much as the vr4 will. I swear im a full blown mitsu mechanic by now between my 2 3000gt's.
*** the 240.
mr2's are nice. Great handling, And gas mileage.. lightweight.. capable of decent power on stock systems.
